Kitchen Petty

The new Bark River Knives Kitchen Petty-Z is a bit Different than the Petty we have made in the past. We make our Petty larger than the traditional Japanese style petty. The changes in this ‘Limited Run’ are two-fold – the Hankotsu Point and a significant Upgrade in Steel. We have combined our Petty’s proven utility and enhanced its usefulness by adding the Hankotsu Style Point which excels in getting “Close to the Bone” when prepping meats and fowl. The step-up in steel from our past use of 12C27 to Crucible 154CM will give this knife at least twice the Edge Holding of our previous runs of Pettys. We have heat treated this batch to 60-61 Rockwell C.

The new Kitchen Petty-Z is full height convex ground to insure is ability to make full blade deep slices.
